Sunday Lunch - Potato salad & Tuna/Fish -Made 3 Ways for Picky Eaters!

Hi everyone! Today is Sunday and that calls for a family lunch that does not take a lot of time but will satisfy the hole family. Cooking for a picky 2 year old, a 9 year old who is just starting to move out of the very picky eating stage and 2 adults can be tricky, especially when you don't feel like cooking 3 separate meals.

So here is how I make the Potato - Tuna/fish salad ingredients work for us all...

Ingredients:


2 Medium Potatoes for each adult +

1 Medium Potato for each child.

2 Tins of tuna (for the adults)

3 Fish Fillet in Batter (ready made frozen) for the kids

Lettuce

4 Cucumbers 

1/4 chopped onion + 2 chopped spring onions

Olive Oil

Lemon Juice (or a vinegar of your choice)

Salt & Black Pepper

Black Olives

Start by chopping all the potatoes in large chunks and cover them with water to boil (add salt or stock for taste).

While the potatoes are boiling chop the cucumbers, onions and lettuce to a large bowl. Now is the time to separate some of the greens your kids like to eat aside! My 9 year old only eats lettuce and my 2 year old only eats cucumbers (sometimes)!



Now that the kid’s greens have been set aside you can add the 2 tins of tuna to your salad and toss it all together.


For the kids I am putting 3 Frozen fillets to grill in the oven 10 min at high cooking and then turn them over for another 10 min (kids like them crispy)!

These are from Lidl and the kids Love them!

Once potatoes are soft separate the servings for the kids and fold in the rest of potatoes in to the large bowl of chopped salad. Add olive oil, lemon juice ( or vinegar) and extra seasoning to taste. Potato Salad is Done!!!


Back to the kids!..

For my 9 year old he likes his boiled potatoes not to touch the rest of his food and with a drizzle of olive oil and seasoned with a little salt and pepper.


My 2 year old will not eat a boiled potato that does not have a crispy exterior so…

Warm up some frying oil and once oil is hot enough add 2 year olds portion of boiled potatoes to get golden crispy.

        

Fillets should be ready to be platted for the kids and we can all eat now!

I add extra amount of black olives to my plate! Yum yum!!!


I wonder, how everyone else is coping with the picky eating phase? I have tried so many of the tips and tricks online and feel so deflated after so much prep that ends up not working.

My advice is to be patient and consistent with adding new foods to picky eaters plate in a gentle way that creates trust. Last year my 9 year old would not even try lettuce and now it’s my go to green food for him.

As long as your kids are healthy and happy there is no need to over-stress. Just take your time and they will set the pace.

If you really worried about the severity of picky eating and your child not getting enough nutrients? It might be a good idea to talk to your pediatrician about food supplements to help until you get through the hard faze.
